Baked Pumpkin with Spinach Noodles

Having guests over but not sure what to cook? This 4-ingredient dish is perfect because it’s easy to prepare, especially for a large group!

Ingredients:

½ pumpkin  (do not remove the skin!)

1 packet of meatballs

1 packet of baby Portobello mushrooms

1 packet of spinach noodles

Steps:

  1. Season the pumpkin with salt and pepper.

  2. Pop it into the oven for 20-30 minutes, at 180 degrees until the pumpkin becomes golden and tender.

  3. Boil the spinach noodles.

  4. Stir fry the baby Portobello mushrooms with the meatballs. Season with salt and pepper.

  5. Place the boiled spinach noodles, mushrooms and meatballs into the baked pumpkin.
